Simple & Sweet Pecan Pie

Yes, I did just blog about healthy eating on the go BUT I have the Thanksgiving itch and one of my favorite desserts that is only consumed at Thanksgiving is Pecan Pie! If you bake it just right this is to die for!!


  • 1 Box refrigerated pie crusts ( I personally like to use Pillsbury)
  • 1/3 cup packed brown sugar
  • 1 1/2 tsp flour
  • 1 1/4 cups light corn syrup
  • 1 1/4 tsp vanilla
  • 3 eggs
  • 1 1/2 cups pecan halves (or pieces or whatever you like)
  • 2 tbs melted butter

DIRECTIONS

  1. Heat oven to 375°F. 
  2. Place pie crust in 9-inch glass pie dish as directed on pie crust box.
  3. In large bowl, mix brown sugar, flour, corn syrup, vanilla and eggs until well blended.
  4. Stir in pecans and butter.
  5. Pour into crust-lined pie dish.
  6. Bake 40 - 50 minutes or until filling is puffed and pie is golden brown.
  7. Cool completely for about 2 hours then store in the refrigerator.
